Apple Crumble Cupcake Recipe.

Hello there! Christmas is taking over the blog… Yaaaaaas! We’re kickin’ the blog off with a little baking and I am SO excited. I couldn’t think of a better way to start off the holiday season than with these delicious Apple Crumble Cupcakes! These cupcakes are easy to make and will look beaut on your Christmas table.

—Let’s Get Started—

Step one: Preheat the oven to 350F and line your cupcake tin with liners. I found these festive ones from Home Goods! Next line a baking tray with wax paper-this will be to bake the crumble.

Step two: Let’s start with the crumble… pop the cubed butter, flour, cinnamon, and sugar into a bowl and mix together with your fingers until it forms a chunky crumbly mixture. Toss the crumble onto the baking sheet and bake for 10-15 minutes, turning every 5 minutes. 

Step three: Whilst the crumble bakes start on the cupcakes, place the butter and both sugars into a large bowl and beat until light and fluffy… This should take about 2 minutes on medium-high speed. 

Add in the eggs and vanilla extract, mix until all the ingredients are incorporated. 

In a separate bowl combine the apple chunks, flour, baking powder, baking soda, and spices. Mix together until all the apples are coated.

Stay with me we’re almost done! Add in the apples and milk, mix on low until well combined.

Step four: spoon the batter into the cupcake tins. Place the cupcakes in the oven for 18-22 minutes, or until golden brown. Tip: insert a skewer into the center, if it comes out clean, they are done.

Transfer the cupcakes to a wire rack to completely cool.

Step five: Here comes the yummy part! Let’s start on the icing by beating the butter` until its light in color and fluffy. Add in the cinnamon, vanilla, and milk. Gradually add the icing sugar and mix until combined.

Step six: Now for the fun part! Spread a thin layer of frosting on the cupcake for the crumble to stick to. Now grab a piping bag and get creative. Sprinkle some crumble onto the top and a festive topper if you fancy!

A few things you should know about me… I graduated Dallas Baptist University last December with a degree in Marketing. While I enjoyed writing papers and filling my resume with internships and “real world experiences”, Post grad life had a different idea for me. A month after graduation I found my life headed in a completely different direction, flight attendant training.

Becoming a flight attendant had never been a dream job of mine. The idea sounded fun and traveling had always been at the top of my list, but I never put the two together. The next four weeks would be more challenging than the past four years.

A year later I can say this job has changed me, challenged me, and steered me in a completely different path than I had planned (all for the good of course).
